Heidi’s goes from food blog to 9-5 bakery

Heidi’s Bakery looks new to some, but for many in the area, Heidi Davison has been serving their baking needs for years.

When Heidi and her husband, Dan, moved to Knoxville, eight years ago, she started a food blog to document her family recipes and to provide home cooks with options.

As her following grew, people asked her to cook or bake for them so regular customers evolved into a catering business for birthday cakes, baby showers or catering jobs.

The small catering business grew to a volume that saw the need to hire employees and to look for property to locate as a brick-and-mortar location.

Heidi says she fell in love with their current location at 4505 Greenway Drive when it came up for sale, although it was not customized for their needs. Since it was originally a house turned tax office, the building had to be completely gutted. They hired an architect, but Dan did a lot of the design, planning and work himself, since he is a mechanical engineer.

Over two years of renovations, hitting every obstacle imaginable, Heidi and Dan completed the vision of the bakery they envisioned, and she says, “I’m so happy we stuck with it because we love our new space! So many people from the community have commented that we need some new places on this side of town. People are very thankful for a new hangout, good coffee and yummy desserts.”

The majority of the bakery’s business is still custom cakes and catering, but it is now offering dessert items in store, a full coffee bar and lunch items: cold sandwiches and chips. The plan is to add a hot lunch as soon they get accustomed to the new facility.

Heidi and Dan have three children, Joshua, Nevaeah and Caleb.
